Cappella Palatina at opening, Monreale booked early
The Cappella Palatina in the Palazzo dei Normanni has the one real line in Palermo. Tour groups fill the small nave through the morning; it is worst from 09:30 to 13:00. Monreale's nave and cloister are tightest in the late morning, when the coaches are there.
Be at the Cappella Palatina at opening or after 14:30, and check the parliament-day closures of the royal apartments. For Monreale, book the half-day tour for first thing in the morning, or go after 16:00.
Markets in the morning, Mondello on a weekday
The markets of Ballaro, Capo and Vucciria are at full voice in the morning and are never gated. The Quattro Canti, the oratories and the Teatro Massimo need no booking outside festival dates. Mondello beach fills on summer weekends and is roomy on weekdays. The cathedral rooftops rarely have a wait.
Do the markets and the oratories on a morning walk. Go up to the cathedral rooftops for the views. Save Mondello for a weekday morning. After dark, Vucciria turns into a place for drinks.

Eat in the markets in the morning, standing up
Ballaro, Capo and Vucciria are Palermo's three markets, dense by nature and at full voice in the morning. Lunch there is eaten standing up. After dark, Vucciria turns into a place for night drinking.
Go to the markets in the morning for the food, and have lunch standing at the stalls. If you want a guide, book the street food market walk. Come back to Vucciria after dark.
Pack for 28 °C and rain on 10 days
