Do the Cours Saleya market before 11:00
None of Nice's sights needs a time slot. The lines that exist are in the old town lanes around the Cours Saleya market, tightest from 10:00 to 14:00 and more so at a cruise-day midday, and in Eze village at midday.
Come to the market before 11:00, while the flowers are fresh. On Monday the flowers make way for antiques. Go to Eze before 10:30 or late in the day. A guided food walk takes you through the old town lanes.
Castle Hill in the morning, Cimiez not on Tuesday
Castle Hill's terraces gather people but never jam; the view over the Baie des Anges costs a stair climb or a free lift ride. The Matisse and Chagall museums in Cimiez hardly ever have a line and are closed on Tuesdays. The Promenade des Anglais is 7 kilometres long and never fills.
Walk the Promenade des Anglais at dawn or at golden hour. Go up Castle Hill in the morning; the waterfall gardens are for the heat of the day. Take the bus up to Cimiez for the two museums and the Roman arena.

Nice's crowd keeps to the Cours Saleya and the old town lanes, Eze village at midday and the blue-chair photo spots. Cimiez, the western miles of the promenade past the Negresco, and the port quarter on the far side of the harbour stay quiet.
Stay a few stops from the centre, near one of the quiet places. The Nice page lists them and links to hotels near them.
Market early, gelato late, lunch by the port
The old town lanes tighten around the flower market in the morning and around the gelato shops at night. The port quarter has bistros on the far side of the harbour. Villefranche, minutes away by train or bus, has a swim and a portside lunch.
Buy at the market before 11:00; on Monday it sells antiques instead. Eat in the port quarter, or take the train to Villefranche for a swim and lunch by the harbour.
Pack for Nice's sun and stairs
